Spicy White Fish Sushi Roll With Kimchi Sauce

Can You Make White Fish Sushi?
Yes, you can make delicious sushi rolls with White Fish! This is a recipe that is perfect for almost any type of White Fish that you can eat raw. It’s very similar to my Spicy Tuna Roll recipe, but there are some key differences. The biggest difference, is that this white fish sushi roll uses MAMA O’S Kimchili Sauce instead of just Sriracha. A while back I had sushi at a local restaurant that was delicious! I noticed they were using some sort of Kimchi sauce in their spicy rolls so I had to try it out for myself!

I made this particular recipe with a White Margate. This isn’t a super common species in South Florida to do much with other than fry, but they are very similar taste wise, to the Snapper we have here. I don’t think we utilize the white fish we have in Florida here as much as we should for raw dishes. They are incredible tasting especially if they are dry aged for a few days!
How I Got This White Margate
I got this particular White Margate out spearfishing off of Dania Beach in South Florida. I had originally went out for Grouper but was unsuccessful in getting a shot off at one, so I started looking around for some other species. I ended up passing on some nice Yellow Jacks and Mutton Snapper because I have recently done some recipes with those species, and I wanted something different.

I was in about 35 feet just drifting down a patch reef. There wasn’t a crazy amount of life on this particular reef, but I did keep seeing some Porgy and Mutton Snapper come by. I was considering taking a Porgy, because they are always great eating, but I wanted to see if something I hadn’t taken in awhile would come by. Eventually this White Margate cruised by and I was able to get a shot on him. He definitely wasn’t the biggest, but he still made plenty of meals!
