Can You Make White Fish Sushi?

Yes, you can make delicious sushi rolls with White Fish! This is a recipe that is perfect for almost any type of White Fish that you can eat raw. It’s very similar to my Spicy Tuna Roll recipe, but there are some key differences. The biggest difference, is that this white fish sushi roll uses MAMA O’S Kimchili Sauce instead of just Sriracha. A while back I had sushi at a local restaurant that was delicious! I noticed they were using some sort of Kimchi sauce in their spicy rolls so I had to try it out for myself!

I made this particular recipe with a White Margate. This isn’t a super common species in South Florida to do much with other than fry, but they are very similar taste wise, to the Snapper we have here. I don’t think we utilize the white fish we have in Florida here as much as we should for raw dishes. They are incredible tasting especially if they are dry aged for a few days!

How I Got This White Margate

I got this particular White Margate out spearfishing off of Dania Beach in South Florida. I had originally went out for Grouper but was unsuccessful in getting a shot off at one, so I started looking around for some other species. I ended up passing on some nice Yellow Jacks and Mutton Snapper because I have recently done some recipes with those species, and I wanted something different.

I was in about 35 feet just drifting down a patch reef. There wasn’t a crazy amount of life on this particular reef, but I did keep seeing some Porgy and Mutton Snapper come by. I was considering taking a Porgy, because they are always great eating, but I wanted to see if something I hadn’t taken in awhile would come by. Eventually this White Margate cruised by and I was able to get a shot on him. He definitely wasn’t the biggest, but he still made plenty of meals!

Ingredients

For The Sushi Rice

  • 1 cup Short Grain Sushi Rice (rinsed)
  • 1 ½ cups Water
  • 1 tbsp Rice Wine Vinegar
  • ½ tbsp White Sugar
  • ½ tsp Salt

For The Spicy White Fish

  • 6 oz White Fish (we used White Margate)
  • 1 tsp Sriracha
  • 1 tsp MAMA O'S Kimchili Sauce
  • 1 tsp Soy Sauce
  • ½ tsp White Sugar
  • ½ tsp Sesame Oil

Other Ingredients For The Roll

  • 2 Nori Sheets
  • Cucumber (optional)
  • Sesame Seeds (optional)

Instructions 

For The Sushi Rice

  • Measure out 1 cup of rice, rinse thoroughly, and add to your small pot.
    1 cup Short Grain Sushi Rice
  • Measure out 1 ½ cups of water and add to your small pot.
    1 ½ cups Water
  • Bring your rice to a boil, reduce heat to low and cover.
  • Once your water level gets below the rice remove from heat.
  • Keep covered for 20 minutes.
  • Remove lid, fluff with a fork, and transfer to a large bowl.
  • In a separate small bowl, add your rice wine vinegar, white sugar, and salt.
    1 tbsp Rice Wine Vinegar
    ½ tbsp White Sugar
    ½ tsp Salt
  • Microwave for 15 seconds and stir. Make sure the sugar is melted. Microwave longer if needed.
  • Add this mixture to your rice, doing your best to spread it around evenly.
  • Set aside.

For The Spicy White Fish Roll

  • Finely chop your fish into small pieces. It helps to cut into strips first.
    6 oz White Fish
  • Add to your medium bowl.
  • Add in your sriracha, kimchili sauce, soy sauce, sugar, sesame oil, and green onion.
    1 tsp Sriracha
    1 tsp Soy Sauce
    ½ tsp White Sugar
    ½ tsp Sesame Oil
    1 tsp MAMA O'S Kimchili Sauce
  • Mix thoroughly and set aside.

Rolling The Sushi

  • Wrap your sushi mat with plastic wrap so the rice doesn't stick.
  • Cut your nori sheets in half or ¾.
    NOTE: You should be able to make 2-3 rolls with this depending on how much fish you use for each.
    2 Nori Sheets
  • Place your nori on your mat smooth side down.
  • Add rice evenly. Sprinkle with sesame seeds if you would like.
    Sesame Seeds
  • Flip over and add your filling. Add any of the other optional ingredients.
    Cucumber
  • Roll your your sushi while applying pressure evenly with your mat.
  • Cut into 8-10 pieces.
  • Add more Kimchili Sauce on top.
    1 tsp MAMA O'S Kimchili Sauce
  • Serve and enjoy!
