Florida Spiny Lobster Alfredo

This is a recipe that I’ve been excited to share for awhile. It’s something you can make entirely out of parts of the Spiny Lobster that are often thrown away: the head, knuckles and leg clusters. Let’s face it, it’s not easy to get the meat out of these parts, it’s a lot of tedious work and you don’t get a huge yield. With these 4 lobsters, I was only able to get about 7 ounces of meat, but that was more than enough for this recipe!

You will be left with a lot of shells when you’re done getting all of the meat out. These shells are perfect for making the broth for my Florida Spiny Lobster Knuckle Head Soup recipe. The main purpose of this Spiny Lobster Alfredo recipe is to show you how many delicious meals you can make with your lobsters using parts other than just the tail meat.

The Components Of Spiny Lobster Alfredo

The first component of this recipe is the lobster meat. While you can use tail meat for this recipe if you don’t have access to whole lobsters, I am using meat from the head, knuckles and leg clusters. If you do choose to use tail meat, just make sure you give it a rough chop before mixing in!

The second component is the noodles. For this recipe, I chose to make fresh, homemade noodles using my MERCATO Atlas 150 Pasta Maker, but you can opt for store bought if you would like. I used to think making noodles at home would be difficult, but it’s honestly extremely easy if you have the right tools. I originally bought my pasta maker to make ramen noodles, but have since used it for noodles of all types!

The final component is the sauce. Again, something I used to think was difficult to make couldn’t be easier! The biggest suggestion I will make about this Alfredo sauce is to go slow! You don’t need to use a super high heat, keep it on low while you add all the ingredients and let it all come together! I’m not a chef, I’m a Spearo and I did just fine! You will too! Florida Spiny Lobster Alfredo

For The Lobster

  • 7 ounces Cooked Lobster Head/Knuckle/Leg Meat

For The Noodles

  • 7 ounces AP Flour
  • 2 Eggs
  • 1 tsp Salt
  • 1 tsp Olive Oil

For The Sauce

  • 4 tbsp Butter
  • cups Heavy Whipping Cream
  • 5 Garlic Cloves (minced)
  • 1 tsp Old Bay
  • ½ tbsp Lemon Juice
  • 1 tbsp Parsley
  • 1 cup Grated Parmesan Cheese

Instructions 

For The Lobster

  • Steam your lobster heads, knuckles, and leg clusters for 10 minutes. Remove and place in an ice bath to stop the cooking process.
  • Pick out all of the lobster meat, I used the head, knuckles, and leg clusters from 4 lobsters and ended up with about 7 ounces of meat.
    NOTE: You can alternatively use tail meat for this recipe if you would like. Just make sure to roughly chop it!
  • Set your cooked lobster meat aside.

For The Noodles

  • Add your flour, eggs, salt and olive oil to a large bowl. Mix thoroughly, the dough will be fairly dry in its earlier stages.
    NOTE: You can also use store bought noodles for this recipe!
    7 ounces AP Flour
    2 Eggs
    1 tsp Salt
    1 tsp Olive Oil
  • Knead the dough on a firm counter for 5-10 minutes until it has an even consistency.
  • Cover the dough with plastic wrap and let sit at room temperature for 30 minutes.
  • Remove from plastic wrap and cut into 2 even portions.
  • Using your Atlas 150 pasta maker, roll the dough starting with 0 and run through twice going all the way up to 5.
  • Once you have your sheet of dough, run it through the larger "fettuccine" cutter. Lightly flour the noodles and set aside.
  • Repeat the process for the other half of dough.
  • Bring a large pot of water to boil and cook noodles for 8-10 minutes until done.
  • Strain noodles and set aside.

For The Sauce

  • Add your butter and heavy whipping cream to a medium pan and simmer on low heat for about 2 minutes, stirring occasionally.
    4 tbsp Butter
    1½ cups Heavy Whipping Cream
  • Add in your garlic, old bay, lemon juice and parsley.
    5 Garlic Cloves
    1 tsp Old Bay
    ½ tbsp Lemon Juice
    1 tbsp Parsley
  • Slowly stir in your grated parmesan cheese until it has all melted.
    1 cup Grated Parmesan Cheese
  • Stir in your lobster and noodles, making sure to coat with sauce evenly.
    7 ounces Cooked Lobster Head/Knuckle/Leg Meat
  • Remove from heat, serve, and enjoy!
