What is Yellow Jack Sashimi?
Yellow jack sashimi is a Japanese-style dish made by thinly slicing fresh, sushi-grade yellow jack and serving it raw to highlight the fish’s natural flavor and texture. The firm, translucent flesh has a mild, slightly sweet taste with a clean finish, making it an excellent choice for sashimi when the fish has been properly handled, chilled, and prepared for raw consumption.

Traditionally, yellow jack sashimi is served with soy sauce, wasabi, pickled ginger, and garnishes such as green onions, daikon radish, or citrus. Its delicate flavor also pairs well with ponzu, yuzu, sesame oil, and other light seasonings that complement the fish without overpowering it. Dry Aged Yellow Jack Sashimi Recipe
This is a recipe that is made for those of you that love spicy food! Habanero Peppers are hot, very hot, and in the case of this recipe they add the perfect amount of flavor to our homemade Ponzu sauce. This recipe is very similar to my blackfin tuna jalapeño recipe, the main difference is that I used a Habanero pepper instead of a Jalapeño, and actually mixed it in with the ponzu sauce for extra flavor!

Another one of the key elements of this recipe is that the yellow jack was actually dry aged for over 7 days. This allowed the fish to really break down and become much more tender than that of a fresh fish. This process also allowed for the fish to develop much more flavor.
How I Got This Fish
I got this particular yellow jack when I was spearfishing off of my kayak at Dania Beach. It’s actually the same fish that I used in my yellow jack break down tutorial. I kept seeing this same school of fish come around time and time again, I was looking for something a little bit bigger, but eventually settled on this particular fish.

It certainly wasn’t my biggest, but it was more than enough meat to make a few meals for Brittany and I. I also did some experimentation using the skin of this fish to make some crispy skin crisps that will come out as a recipe down the road once I master it. This particular fish ended up making 1 full meal, 2 appetizers, and 1 snack, all for 2 people.
