Why Make Grilled Lobster Kebabs?

Grilled Lobster Has So Much Flavor

Lobsters are one of those species that truly have endless possibilities when it comes to what you can make with them. Because I regularly get them, I often find myself trying to think of different ways to cook them. Over the years, I’ve made lobster tempura sushi rolls, lobster ramen, lobster spring rolls, Nashville hot lobster sandwiches, and so much more. Sometimes, though, I forget how simple is sometimes better, and that’s exactly what these grilled lobster kebabs reminded me of.

How I Got The Spiny Lobsters

Diving For Spiny Lobster In Florida

This particular time I was out diving with my good buddy, Eddie, off Fort Lauderdale. I had some friends, who were living on a sailboat at the time, also meet us out there to do some spearfishing. We ended up coming across some absolutely loaded ledges and everybody was able to take home a few. My buddy ended up losing his shaft to a big dog snapper this day, that I ended up finding over a month later! (The shaft, not the snapper).

The next day, my friends that lived on a sailboat, were kind enough to have me over for dinner to cook a couple of the tails we got the day before. We ended up making these delicious lobster kebabs on the grill they had on the back of the boat. While these may seem simple and basic, I promise they’re good! The best part is, you can literally mix and match so many different things on the skewers. Get creative and let me know what you come up with!

Florida Spiny Lobster Kebabs

As delicious as they are simple, these kebabs are sure to be a hit at your next get together. With so many combinations of what you can put on them, you can't go wrong.

Equipment

Ingredients

  • 2 Florida Spiny Lobster Tails
  • ¼ Pineapple (Or pre chunked.)
  • ¼ Red Onion
  • 1 Bell Pepper (Color of your choice.)
  • 1 Zucchini
  • Olive Oil

Instructions 

Preparing The Skewers

  • Soak the bamboo skewers in water to prevent them from catching on fire when they go on the grill.
  • Cut your pineapple and vegetables into 1 and ½ inch chunks that will fit well on the skewers.
    ¼ Pineapple
    ¼ Red Onion
    1 Bell Pepper
    1 Zucchini
  • Remove the meat from your lobster tails and cut into even sized chunks.
    2 Florida Spiny Lobster Tails
  • Assemble the kebabs.
  • Lightly brush the kebabs with olive oil, to give them a nice char while they're on the grill.

Grilling The Kebabs

  • Preheat your grill to 450 °F
  • Place the kebabs evenly on the grill.
  • Grill for 10 minutes, making sure to rotate them throughout the cook.
    NOTE: The lobster will cook quick because the pieces are small.
  • Check the lobster and vegetable for doneness.
  • Remove from grill.

Plating

  • Place the kebabs on a platter.
  • Serve with rice or any other side you like!
  • Enjoy!

Notes

  • Feel free to add or substitute any of the kebab ingredients:
    • You could add chunks of steak for a surf and turf kebab!
    • You could marinate the lobster in a sauce before putting them on the kebabs.
    • Get creative and see what you come up with!
