Why I Didn’t Go Out For Mini Season

This year I decided not to go out for Florida’s annual Spiny Lobster Mini Season. The main reason was that I didn’t have a boat and didn’t feel safe enough to take my kayak out or do a shore dive with all of the boats that would be off Dania Beach. The weather looked perfect this year, which meant there would probably be even more people out than usual! I made the decision to wait for the regular season to open.

Opening Day Of Spiny Lobster Season

The first day of lobster season this year was great to me! I ended up shooting a 7lb Dog Snapper just as the sun came up and got my fill of lobsters as well as 2 nice Channel Clinging Crabs. I had some family coming into town in the coming days so I wanted to do something special! This is one of the meals I made!

Equipment

Ingredients

  • 1 Spiny Lobster Tail (or other lobster)
  • 6 oz Fresh Lime Juice
  • 6 oz Fresh Lemon Juice
  • ¼ White Onion (finely chopped)
  • 1 Jalapeño (finely chopped)
  • Cilantro (finely chopped)
  • 2 Garlic Cloves (finely chopped)
  • Kinder's "The Blend" Seasoning (to taste)
  • 1 Lime Wedge (for garnish)
  • 1 Lemon Wedge (for garnish)

Instructions 

Prepping The Spiny Lobster Ceviche

  • Remove the meat from your lobster tail and begin cutting into small pieces. You can cut them small or large depending on how you like it. Place in your medium sized bowl.

  • Add in your lime juice and lemon juice. Cover with plastic wrap and place in the refrigerator overnight or for at least 2 hours.
    6 oz Fresh Lime Juice
    6 oz Fresh Lemon Juice

Assembling The Spiny Lobster Ceviche

  • Remove your ceviche from the refrigerator.
  • Add in your white onion, jalapeño, cilantro, and garlic cloves.
    ¼ White Onion
    1 Jalapeño
    Cilantro
    2 Garlic Cloves
  • Add seasoning to taste.
    Kinder's "The Blend" Seasoning
  • Mix thoroughly and garnish with a lime and lemon wedge.
    1 Lime Wedge
    1 Lemon Wedge
  • Serve with tortilla chips, and enjoy!
