Korean Fried Snapper Sandwich

What Is A Korean Fried Snapper Sandwich?
A Korean fried snapper sandwich is a crispy fish sandwich inspired by the bold flavors and ingredients commonly found in Korean cuisine. It typically features a battered and fried fish fillet served on a soft bun with toppings such as kimchi, pickled vegetables, shredded cabbage, cucumber, or scallions. The sandwich is often finished with a flavorful sauce made from ingredients like gochujang, mayonnaise, garlic, or sesame oil, creating a balance of spicy, savory, sweet, and tangy flavors.

The contrast between the crunchy fried fish and the bright, acidic toppings is what makes a Korean fried fish sandwich unique. While traditionally made with white fish such as cod or pollock, species like grouper, snapper, hogfish, or African pompano can also be excellent choices due to their firm texture and mild flavor.
About This Fried Snapper Sandwich Recipe
This Korean fried snapper sandwich recipe is one that I’ve been making for several years, improving and tweaking things over time. The one thing that always stays the same, however, is the quality of the fish. For this particular recipe I used Mutton Snapper, although just about any type of snapper we have in Florida would also do just fine!

The mouthwatering homemade Korean Sauce is really what makes this recipe so good, especially when combined with the Kimchi Slaw and the Gochujang Aioli. I’ve actually made this same recipe with spiny lobster before too, and it turned out just as great! Get creative and try this recipe with other species and see how it comes out!
How I Got This Mutton Snapper
I got this particular Mutton Snapper while out spearfishing off Dania Beach on my kayak. I was coming up from a dive when I saw him on top of a rock with 2 other big snappers. I quickly aimed and took a shot at him that unfortunately ended up tearing out. He made a run for the rocks and after about 15 minutes of searching for him, I was able to locate him.

He was definitely shaken up from the first shot and was still skeptical of me but I was still able to put a good holding shot in him and bring him to the surface. I knew the first shot I got on him messed up the fillet, but it didn’t do as much damage as I had originally thought. Even though the shot wasn’t ideal, bleeding him out and gutting him right after I got my hands on him, really salvaged the fillets!
