About This Fried Snapper Sandwich Recipe

This Korean fried snapper sandwich recipe is one that I’ve been making for several years, improving and tweaking things over time. The one thing that always stays the same, however, is the quality of the fish. For this particular recipe I used Mutton Snapper, although just about any type of snapper we have in Florida would also do just fine!

The mouthwatering homemade Korean Sauce is really what makes this recipe so good, especially when combined with the Kimchi Slaw and the Gochujang Aioli. I’ve actually made this same recipe with spiny lobster before too, and it turned out just as great! Get creative and try this recipe with other species and see how it comes out!

How I Got This Mutton Snapper

I got this particular Mutton Snapper while out spearfishing off Dania Beach on my kayak. I was coming up from a dive when I saw him on top of a rock with 2 other big snappers. I quickly aimed and took a shot at him that unfortunately ended up tearing out. He made a run for the rocks and after about 15 minutes of searching for him, I was able to locate him.

He was definitely shaken up from the first shot and was still skeptical of me but I was still able to put a good holding shot in him and bring him to the surface. I knew the first shot I got on him messed up the fillet, but it didn’t do as much damage as I had originally thought. Even though the shot wasn’t ideal, bleeding him out and gutting him right after I got my hands on him, really salvaged the fillets!

Ingredients

For The Kimchi Slaw

  • 3 oz Coleslaw Mix
  • 6 oz Kimchi

For The Gochujang Aioli

For The Korean Sauce

For The Snapper Sandwich

  • 2 6 oz Snapper Fillets (or similar fish)
  • 2 Eggs
  • 1 cup AP Flour
  • 1 tbsp Korean Chili Flakes
  • 1 tbsp Garlic Powder
  • 1 tbsp Corn Starch
  • Avocado Oil (for frying)

For Assembling The Snapper Sandwich

  • 2 Brioche Buns
  • Sesame Seeds (optional)

Instructions 

For The Kimchi Slaw

  • Add your Coleslaw Mix and Kimchi to a Large Bowl.
    3 oz Coleslaw Mix
    6 oz Kimchi
  • Mix thoroughly and set aside.

For The Gochujang Aioli

  • Add your Kewpie and Gochujang Paste to a Small Bowl.
    1 tbsp Gochujang Paste
    3 tbsp Kewpie
  • Mix thoroughly and set aside.

For The Korean Sauce

  • Add your Soy Sauce, Mirin, Brown Sugar, Korean Chili Flakes, and Fresh Squeezed Orange Juice into a Small Sauce Pan.
    3 tbsp Soy Sauce
    1 tbsp Mirin
    2 tbsp Brown Sugar
    1 tbsp Korean Chili Flakes
    1 tbsp Fresh Squeezed Orange Juice
    1 tbsp Gochujang Paste
  • Heat the mixture on medium heat, while stirring, for a few minutes until the sauce thickens and everything comes together.
  • Remove from heat and set aside.

For Frying The Snapper

  • Whisk 2 Eggs in a Small Bowl. Set aside.
    2 Eggs
  • Combine your AP Flour, Korean Chili Flakes, Garlic Powder, and Corn Starch in a Medium Bowl and set aside.
    1 cup AP Flour
    1 tbsp Korean Chili Flakes
    1 tbsp Garlic Powder
    1 tbsp Corn Starch
  • Coat both Snapper Fillets in Egg, and then coat in the flour mixture. Repeat this process and set aside.
    2 6 oz Snapper Fillets
  • Heat your Avocado Oil to 375℉ in a Medium Pot.

  • Once the oil is up to temp, fry your Snapper Fillets for 6 minutes. Remove from oil and set aside.

For Assembling The Snapper Sandwich

  • Plate your Brioche Buns and put Gochujang Aioli on the bottom bun.
    2 Brioche Buns
  • Take your Fried Snapper Fillets and coat them in your Korean Sauce and place them on the bottom bun.
  • Add your Kimchi Slaw on top and garnish with Sesame Seeds.

  • Serve and enjoy!
