Florida Spiny Lobster Spring Rolls
After eating some heavier meals a few days in a row, I needed something fresh! I had a few Spiny Lobster tails left from my last haul, and had experience making Spring Rolls before, but never with lobster. I figured it couldn’t bee too far off the ones I had made with shrimp before, so I decided to give it a go!

The Components Of These Florida Spiny Lobster Spring Rolls
The first component of this recipe is the lobster itself. While you can use other types of lobster, I am using Florida Spiny Lobster for this recipe. One of the key points that I want to make is to make sure you submerge your lobster tail in an ice bath after you cook it to stop the cooking process! This will prevent it from overcooking and also chill it for the spring rolls.

The second component of this recipe, is the noodles. For this recipe I used a vermicelli rice noodle that should be available in most grocery stores in their international food sections. The key point with these is that you don’t want to overcook them and make them too soft.
The third component of this recipe is what you put inside with the lobster; the vegetables. In this case I used carrots, red cabbage, cucumber, green onion, avocado, basil, mint and cilantro. This is where you can get creative and add anything else you would like. Fruits like mango also go very well in these!
The fourth component of this recipe is the spring roll wrapper itself. For these, you really want to make sure you follow the instructions on the package so that the wrapper is the perfect consistency. If you soak them for too long or too short they may break.
The fifth and final component of this spiny lobster spring rolls recipe is the sauce! In this case I used a store bought sweet chili sauce that should also be available in most grocery stores. A peanut sauce is also very popular for spring rolls and would also go great with this recipe!
Even though lobster season here in Florida just closed, this is a great recipe you can make with those frozen tails and definitely a great appetizer for any get together. I hope you enjoy this recipe!
