Cali-Style Typhoon Shelter Lobster Recipe
Imagine your self entering the cold dark ocean at night, no lights other than the flashlight you are diving with. You are on the surface staring down into the dark below and your flashlight isn’t able to illuminate the bottom. You slow your breathing, take one last deep breath, and duck dive down.
1 kick…2 kicks…and suddenly a circle of the bottom lights up and before you know it, you are on the bottom. Now it is time to quickly scan with your flashlight the area around you looking for the tell tale signs of a lobster…two long antennas coming out of a hole, 2 small shiny eyes, or a strange long red/brown shape walking the bottom.

While I can’t tell you exactly how I got this lobster, most lobster this night were caught “walking.” Basically either walking along the bottom, crawling over rocks, or sitting just feeding on algae. This is a lobster diver’s dream because they are far easier to grab. And on this night, my buddy Sharkhead and I got our limits of 7 in under 40 minutes!
With all of the lobsters I get each season my goal is to try as many recipes as possible using California Spiny Lobster as the showpiece. At the time, my top 3 lobster recipes were: katsu lobster roll, lobster aguachile, and miso lobster mac and cheese (famously made by our friend on Spearos Kitchen…Chews by Chiu).

Right before the end of the season, a TikTok came up by Chef Jet Tila where he quickly makes his Typhoon Harbor Lobster. The video is quick but the lobster looked incredible. It was time to prioritize the recipe. And yes…it is worth it!!! Sorry Charles…the miso Mac and cheese became a casualty of this recipe!
