The Catch: How I Caught This Lobster

Slipper Lobsters are not something I come across every time I go out diving. They lack the long antennas of their cousin, the Spiny Lobster, and are much more camouflaged on the reef which make them difficult to spot. Most of the times I have found these alien looking creatures has been while I’m shining my flashlight back into the backs of caves in search of something else.

This particular day was no different. I was diving off of my kayak around Dania Beach and I just happen to be in the right place at the right time. I was actually looking for a Dog Snapper that I had been stalking when I noticed this Slipper Lobster sitting under a rock. I quickly grabbed him and brought him back to the surface. It’s always a treat harvesting one of these, so I wanted to do something special.

The Cook: What I Did With This Lobster

It had been while since I harvested one of these, so I was trying to think of something different I could do with it – something you don’t see too commonly done with lobster. Poke has always been a go to for my girlfriend and I when it comes to fish, especially when I get a nice Blackfin Tuna, so I was thinking maybe we should make lobster poke bowls!

For lobster, I wanted to stray away from the more traditional shoyu style poke that uses soy sauce and sesame oil, and learn more towards a creamy and spicy style – almost like what I did on this lobster roll. We had also recently been experimenting with quick pickling different veggies, so I thought that this would be the perfect recipe to add some of that too! I hope you enjoy this lobster poke recipe:

Ingredients

For The Slipper Lobster Poke

  • 1 Slipper Lobster (or Spiny Lobster)
  • 3 tbsp Kewpie Mayo (or regular mayo)
  • 1 tsp Wasabi Paste (or more if desired)
  • 1 tsp Soy Sauce
  • 1 tbsp Furikake Seasoning (optional)

For The Quick Pickled Veggies

  • Watermelon Radish (thin sliced)
  • Carrot (sliced longways)
  • Cucumber (thin sliced)
  • Red Onion (thin sliced)
  • 1 cup Apple Cider Vinegar (or white)
  • 1 cup Water
  • 1 tbsp Sugar
  • 1 tsp Salt (or more if desired)

Other Ingredients For The Poke Bowl

  • 1 cup Cooked Jasmine Rice (or sushi rice)
  • Avocado (sliced)
  • Green Onion (for garnish)
  • Sesame Seeds (for garnish)

Instructions 

For The Slipper Lobster Poke

  • Bring water to boil in your large pot with lid. Boil your lobster whole (or just the tail) for 10-12 minutes. Remove from the pot and place in a bath of ice water to stop the cooking process.

  • Once the lobster has cooled, use kitchen shears to remove the meat from the shell. If you are using the whole lobster be sure to get all of the meat out of the head, legs and knuckles.
  • Roughly chop all of the lobster meat into 1×1 inch cubes. It's okay if there are smaller pieces.
  • Add your lobster meat into a mixing bowl and add in your Kewpie mayo, wasabi paste, soy sauce, and furikake seasoning. Mix thoroughly and set aside in the refrigerator.
    3 tbsp Kewpie Mayo
    1 tsp Wasabi Paste
    1 tsp Soy Sauce
    1 tbsp Furikake Seasoning
  • Make sure to fully mix in the wasabi paste so you don't have clumps! You'll thank yourself later!

For The Quick Pickled Veggies

  • Cut your watermelon radish, carrots, cucumber, and red onion.

  • In a mixing bowl, add in your apple cider vinegar, water, sugar, and salt. Mix thoroughly until all of the sugar has dissovled.
    1 cup Apple Cider Vinegar
    1 cup Water
    1 tbsp Sugar
    1 tsp Salt
  • Place all of your veggies in the bowl. Make sure they are all covered with the mixture. Place in the refrigerator for 10-15 minutes.

Assembling The Poke Bowl

  • Split your rice evenly between your 2 bowls.
    1 cup Cooked Jasmine Rice
  • Add in your Slipper Lobster Poke, followed by your quick pickled veggies and sliced avocado.
