Mutton Snapper Dumplings

This is something that I never really thought about making until recently. Someone mentioned something to me about making Gyoza with fish the other day, and it really got me thinking. I’ve always loved dumplings, but I can’t say I’ve ever had them made with fish! I figured if I was going to make them, this Mutton Snapper would be the perfect fish.

To my surprise, these came out great, so great, in fact, that I had to make a recipe for them! Not only were the dumplings themselves incredible, the sauce was, too! I think any of the Snappers we get here in South Florida would be great for this recipe, and even some other species like Yellow Jack.

How I Got This Fish

I got this particular Mutton Snapper while out spearfishing off Dania Beach on my kayak. I was coming up from a dive when I saw him on top of a rock with 2 other big snappers. I quickly aimed and took a shot at him that unfortunately ended up tearing out. He made a run for the rocks and after about 15 minutes of searching for him, I was able to locate him.

He was definitely shaken up from the first shot and was still skeptical of me but I was still able to put a good holding shot in him and bring him to the surface. I knew the first shot I got on him messed up the fillet, but it didn’t do as much damage as I had originally thought. Even though the shot wasn’t ideal, bleeding him out and gutting him right after I got my hands on him, really salvaged the fillets!

Ingredients

For The Mutton Snapper Dumplings

  • 16 Spring Roll Wrappers
  • 16 oz Mutton Snapper Fillets (finely chopped)
  • 2 tbsp Ginger (grated)
  • 5 Garlic Cloves (minced)
  • ¼ cup Chives (finely chopped)
  • 2 tsp Soy Sauce
  • 1 tbsp Corn Starch

For The Sauce

  • cup Rice Wine Vinegar
  • cup Soy Sauce
  • 3 Cloves Garlic (grated)
  • 1 tbsp Brown Sugar
  • 2 Green Onions (thinly sliced)
  • 1 Red Chili Pepper (thinly sliced)
  • 1 tsp Sesame Seeds
  • 2 tbsp Chili Crisp
  • ¼ cup Avocado Oil

Instructions 

For The Mutton Snapper Dumplings

  • Add your Mutton Snapper, Ginger, Garlic Cloves, Soy Sauce, and Cornstarch to a Medium Bowl.
    16 oz Mutton Snapper Fillets
    2 tbsp Ginger
    5 Garlic Cloves
    ¼ cup Chives
    2 tsp Soy Sauce
    1 tbsp Corn Starch
  • Mix thoroughly.
  • Fill your Large Pan with about an inch of water.
  • One at a time, soak your Spring Roll Wrappers in the water in your large pan for about 20 seconds.
  • Remove and fold 2 of the edges of the circle to the middle so they touch. Turn 90 degrees and fold the other edges of the circle to the middle forming a square.

  • Place about 1 oz of your dumpling filling on the Spring Roll Wrapper. Fold all 4 corners up, pinching at the seams. Then set aside.
  • Repeat for all 16 dumplings.
  • Bring 3 inches of water in your Pot with Steamer Attachment to a boil. Line the Steamer Attachment with Parchment Paper and poke a few holes in it.
  • Place your dumplings in your Steamer Attachment, making sure they don't touch each other, and steam covered for 10 minutes.
    NOTE: Depending on the size of your steamer you may have to steam the dumplings in several batches.
  • Remove the dumplings and set them aside.

For The Sauce

  • Add all of your ingredients to a Large Bowl and mix together.
    ⅓ cup Rice Wine Vinegar
    ⅓ cup Soy Sauce
    3 Cloves Garlic
    1 tbsp Brown Sugar
    2 Green Onions
    1 Red Chili Pepper
    1 tsp Sesame Seeds
    2 tbsp Chili Crisp
    ¼ cup Avocado Oil

For Plating The Mutton Snapper Dumplings

  • Place 4 to 8 dumplings in a serving bowl and spoon the sauce over them.
  • Use any remaining sauce for dipping.
  • Serve and enjoy!
